Soil type: Heterogeneous, clayey, shallow.
Climate: Temperate, with cold winters and hot summers. Average rainfall with maximums in June and November.
Training system: Sylvoz
Yield: Maximum 180 grapes/ha
Harvest time: Second and third decade of September.
Vinification: Soft pressing with pneumatic press, static decantation of the must, controlled-temperature fermentation (16-18°C).
Foaming: In steel autoclaves; refermentation temperature is between 14 and 16°C, tartaric stabilisation is carried out cold (4°C). The duration of refermentation in the autoclave is 60/70 days, after which isobaric bottling (under pressure).

Organoleptic characteristics:
Colour: Straw yellow, intense mousse with fine and persistent perlage.
Bouquet: very fresh with marked hints of green apple, wisteria and acacia flowers; a delicate and balanced wine with aromatic notes of great freshness.
Taste: pleasantly light and delicate, with a good sapidity that makes it appealing, harmonious and satisfying. Its taste is highly appreciated by the international market.
Food pairings: An excellent aperitif, it is also used throughout a meal. It is also excellent paired with fish and vegetable starters and with first courses in general.
Serving recommendations: Serve chilled at a temperature of approximately 7-8°C
Storage: In a cool, dark place. Avoid long stays in the refrigerator.
Time of consumption: To be enjoyed young, in the year following the harvest.
