Vinification: Soft pressing with pneumatic press, static decantation of the must, controlled-temperature fermentation (16-17°C).
Foaming: In steel autoclaves; refermentation temperature is between 15 and 16°C, tartaric stabilisation is carried out cold (4°C). The duration of refermentation in the autoclave is 60-70 days, after which isobaric (pressurised) bottling takes place.

Organoleptic characteristics:
Colour: Straw yellow with greenish reflections, fine mousse with fine and persistent perlage.
Nose: fruity with marked hints of green apple, golden apple, acacia flowers. It is a delicate and balanced wine with great freshness.
Taste: pleasantly light and smooth with a certain sapidity that makes it appealing, harmonious and pleasant on the palate. Very popular on the international market.
Food pairings: Excellent as an aperitif, accompanied by crudités of vegetables and risottos. Ideal with summer dishes, fish, white meats and unripened cheeses.
Serving recommendations: Serve chilled at a temperature of approximately 7-8°C
Storage: In a cool, dark place. Avoid long stays in the refrigerator.
Time of consumption: To be enjoyed young, in the year following the harvest to better appreciate its pleasant characteristics.
