Winemaking: Soft pressing with a pneumatic press, static settling of the must, fermentation at a controlled temperature (16-18°C).
Foaming: In steel autoclaves; the refermentation temperature is between 14 and 16°C, the tartaric stabilization is carried out cold (-4°C). The duration of the refermentation in autoclave is 60/70 days, after which isobaric bottling is carried out (under pressure).

Organoleptic characteristics:
Color: Straw yellow, intense foam with fine and persistent perlage.
Aroma: It presents itself very fresh with marked aromas of green apple, wisteria flowers, and acacia flowers; it is a delicate and balanced wine with aromas of great freshness.
Taste: Pleasantly light and delicate, with good acidity that makes it captivating, harmonious, and satisfying. It has a taste that is highly appreciated by the international market.
Food pairings: Excellent as an aperitif, it is also used throughout the meal. It is also great paired with fish and vegetable appetizers and first courses in general.
Service: Served chilled at a temperature of about 5°C
Storage: In a cool and dark place. Avoid long stays in the refrigerator.
Consumption period: To be enjoyed young, in the year following the harvest.
